Arroz a la Cubana
I am not sure if this dish really originates from Cuba but this is one complete meal that is sumptuous and very easy to prepare. I prefer using beef here although the original calls for pork because beef is more flavorful.
Takes 30 minutes to prepare.
Makes 5 servings.
4 cloves garlic, crushed
1 pc. medium onion, sliced
1/4 kg ground beef
1/4 kg sweet potato, diced
200 g tomato sauce
1/4 cup raisins
1/3 cup frozen green peas
5 cups hot cooked rice
5 pcs. eggs, cooked sunny side up
3 pcs. medium ripe saba bananas, each sliced diagonally into 5 and fried
salt & pepper to taste
Directions:
1. Saute garlic, onion and beef.
2. Add sweet potato. Cook for 5 minutes or until brown.
3. Add the tomato sauce, raisins, green peas, and salt & pepper to taste. Cook for 10 minutes. Set aside.
4. Mold or scoop 1 cup cooked rice on individual plates. Put sauteed meat mixture and fried saba banana around the rice. Top with fried egg.
